“THE JAMIE OLIVER OF NUTRITION”

What was the main reason behind you becoming a nutritionist?

What got me into nutrition was my journey through it.

I was in a pressurized industry from 15 years of age. I was becoming relatively low in energy, quite low in my mood, and everyone around me was suffering from anxiety and high stress. I was like: ''There has got to be a better way of maintaining your health.''

That's when I started studying quantum nutrition. I came back and did Biochemistry and started learning about the importance of the body and the importance of not just how you look aesthetically, but how it affects your mental health.

I thought if people knew this, not only would they look good, but feel great. I continued to learn more about how the body works and its importance, and it grew from that.

What was one of the most challenging moments since you became a nutritionist?

In the beginning, the more I learned, the less I thought I knew. So I got a bit nervous talking about it at first. Oh my God, there's even more than I realized.

Now, after I've gone away and studied for many years to get my bachelor of science I know what I'm talking about. I've done my research, and I've done my education. I'm on a register, and I am an expert.

What are some of the mental health challenges you faced in the model industry?

Ten years ago, mental health just wasn't spoken about, and especially being relatively young, I couldn't tell you what anxiety meant.

I suffered from very high stress and anxiety, looking back on it. I was in a demanding environment, and my full financial value rested on my aesthetic appearance. 

I ended up getting back into the kitchen, where I understood what I needed to eat. Slowly, over time, I started to feel so much better and also looked better after myself.

How has the modeling industry changed compared to your early experience?

Now looking at it, it's much more diverse, and it's much more accepting of different body shapes. 

There's a genuine interest in model wellbeing. You now have to get a doctor's letter to do Paris fashion week to say that you are a healthy weight. These initiatives and policies are in place, but how active they are is another conversation.

What is your favourite cheat meal?

Great question! So for me, language is essential when it comes to anything with nutrition. I would never call it a cheat meal, and I would say I don't categorise any foods as good and bad. When I want something quick and sugary, my indulgent meal would probably be granola.

What do you think about food waste nowadays?

More conversations around how we reduce food waste quickly and easily need to happen.

I created an ebook titled ''The Great British Veg Out'' because only 21% of the UK eat their five a day. That's a meagre statistic since that's the motivating factor in reducing chronic diseases and working in prevention. 

The focus behind the book was not only to get to eat these vegetables or optimize to reach that goal from one meal a day but also to create it with zero food waste.

You recently worked with James Cameron. How was it working on the set of Avatar?

It was impactful. The movie industry is crazy, and we get to do lots of really cool and exciting things... James Cameron and his wife are terrific, and they stand by what they believe.

What advice would you give to someone considering a sustainable lifestyle?

I would say that's not a good thing to do. Everything is in balance, and everything takes time. You're not just going to run a marathon, you're going to train, and you're going to prepare for it.

Why do you feel safest 40 feet underwater surrounded by sharks?

That was possibly the safest place in the world because I was underwater, and no, one was going to mess with me at 40 feet. I've got like 30 bodyguards swimming around me at night. I'm okay.

 

Have you ever been bitten by a shark?

This one's always a tricky one to answer... I must highlight that anytime I've been in a situation with a shark where it has not been ideal, it's because I've put myself into that position. Luckily, I still can't feel all my fingers, but I have all of them.

What's the best way to jump-start your day?

Get a cold bath or a cold shower first thing in the morning when you don't want to. If you can overcome that, you can overcome anything else that pops up in the day.

What got you into Veganism? How was that journey?

It was a health decision. I had chronic fatigue and burnout. Then one day, I couldn't get out of bed. At that time, I was researching diet to feel better, and I connected with its ethics in a way that I'd never really thought about before.

Going into vegan life, What were some of the challenges you faced in your old life?

The thing that I've gone back and forward over the years has been fashion—buying leather, not purchasing leather. Last year, I was like, I can't buy leather anymore. I was disconnected from the impact it had, and I've now made that connection as well when I've done the research and I looked into it.

Did going through a traumatic experience early on shift your perspective?

In hindsight. Yes. I remember I was 16. One of my friends got killed in an altercation. There were a lot of questions, and for me, it gave me a sense of mortality. Like, wow. It can be over like that. It was a traumatic experience, but it taught me a lot about mortality if I look at it now. It probably caused me to be more proactive in the things that I wanted to do.

What is Liter of Light?

Liter of Light is an open-source design for a low-cost light tube that refracts solar light to provide daytime interior lighting for dwellings with thin roofs. The device is simple: a transparent two-liter bottle is filled with water plus a little bleach to inhibit algal growth and fitted into a hole in a roof.

What led you to begin your quest to end energy poverty?

So in 2013, super typhoon Yolanda, also known as 'Haiyan', affected the Philippines when it made landfall resulting in catastrophic damage, killing thousands and displacing many people. It was a dark time. Though survival was essential, cases of rape and theft were rising. I knew we needed an avenue of light immediately.

 

What challenges did you face while working on a solution?

Initially, when enquiring about the cost of solar streetlights, I found that 60 to 80% of the humanitarian aid fund goes towards logistics alone, which is a considerable percentage of our budget. That's when I learned that buying them wasn't feasible.

So you started in the Philippines, and today you're in 30 countries worldwide. How has your revolution gained momentum?

It started with one challenge. Soon after, people began challenging each other to build our solar light kits: Ministers, prominent people in business, influencers, and celebrities got involved. The people's power was in full effect. 

 

From a tragedy to hitting 1 million lights around the world. What are some of your Twilight Zone moments?

I had a moment in Brazil, lighting up these villages when I received an email from Dreamworks. Steven Spielberg was working on developing a documentary series based on five change-makers whose ideas have changed the world, and he wanted me to be one of them. The power of ideas. Anyone anywhere can make a difference. 

Do you have any advice for people who want to make a difference in their community?

The strength of multiplying yourself worldwide has the most significant impact, not the person alone. That includes giving up the helm of leadership to local leaders.
